I had this vivid memory of my mum baking chocolate cake for me when i was 5 in the late 80′s. My mom gave my sister the recipe years ago and we dug it up for this occasion as i was craving chocolate cake! It hasn’t been made in over 15 years and i’m amazed the end result turned out just how i remembered!
She used to bake all the time and this was one of my favourites. She would serve it semi-hot from the oven and butter-cream it with sprinkled flakes and a scoop of vanilla ice cream. If there wasn’t butter cream she would pour hot chocolate fudge on the cake with icecream on the side.

I think it looks like an 80′s cake… I don’t know why but there is something about it that makes it look so old fashioned and I love it. I’m surprised my cake turned out perfect! Inside was beautiful, moist, rich with good quality cocoa which reminded me of a nice dark chocolate cake.

I’ve always been a huge fan of cream and this i blame my mom for making butter cream all the time. Icing was never big in our family.. in fact its always been the topping on a cake that we’ve always disliked. I love you butter cream ^_^

PREPARATION
2 eggs
¾ caster sugar
2½ self raising flour
3 tsp good quality cocoa
¼ tsp baking powder
2 tsp of butter
¾ milk
vanilla essence
METHOD
1. Mix self raising flour, cocoa and baking soda together
2. Warm milk with butter until melted
3. Beat eggs then pour caster sugar and beat until sugar dissolves
4. Add a drop of vanilla essence
5. Combine self raising flour / coca mix with egg mixture. Stir until smoothed (do not over do it!)
6. Bake for 180ºc

BUTTER CREAM
2 tsp of butter
little bit of water
vanilla essence
4 tsp caster sugar
METHOD
1. Pour all ingredients into a bowl and mix with beater
2. Beat until colour changes to white and into cream
