It’s all about DON Ft. Matt Preston & Gerhard Feiner

Is Don. Is Good is the phrase that everyone has heard or knows about. Having been around for 60 years, I’m sure everyone would have purchased their products during their life time..whether it be, Salami, Bacon, Prosciutto, Frankfurts, Sausages, shaved meats and many more products.

Various media sources and with compliments of nuffnang, five food bloggers Helen, Howard, Ellie, Melissa were joined together with special guests, Matt Preston and Fleishmister Gherard Feiner for an informative session about DON’s quality Salami that would forever open my eyes to the world of cured meats.

Gehard Feiner is one of DONs Fleischmeisters who overseas the entire salami making process and Matt Preston is also known to be one who makes Salami himself. Both joined forces and shared interesting techniques and tips about salami which I found very helpful.

Usually when there’s a salami sandwich, pepperoni pizza or an antipasto platter, my main focus is getting all this good food in my mouth and letting my taste buds do all the work. Now that i’ve been informed about the different types, preparation methods, and tips and hints, I thought i’d share a couple which captivated my mind and points you will remember.

Held at The Victoria room in Darlinghurst, there we enjoyed a 3 course lunch prepared by Adam Moore who cooked various dishes containing a selection of DON salami’s that made our mouths melt and inspire methods of introducing salami into our cooking.

Appetisers

Fresh figs with gorgonzola and Don prosciutto
The sweetness of the figs and the Proscuitto make a beautiful combination. Mouthwatering and great way to start.

Coffin Bay oysters with crisp DON chorizo and caramelised balsamic
Apologies for the poor quality photo. Not your average kilpatrick oysters. Who needs bacon pieces when Chorizo complements this just awesome!

Starters

Antipasto – DON White Hungarian , DON Hot Hungarian, DON Danish and DON Pepperoni
Salami and Pepperoni was to die for. The salami did melt in your mouth which was amazing as I never really took notice of from previous experiences. My ultimate favorite is the Hot Hungarian. Anything chilli wins me over. Would love it if there was a super hot version… it would solve my chilli cravings Mmmm!

Mains

Roasted lamb rack with warm salad of rocket, goats cheese and peppers served with Don white Hungarian salami and garlic chips
Lamb was extremely tender and cooked to perfection. The grilled eggplant and the hungarian salami took this to a whole new level. Who thought Salami could be crispy and taste cooked like this!!!!!!!!! Genius!

Twice cooked confit of duck with orange, pistachio and DON Pepperoni Salami on a beetroot relish
Helen gave me a sample of this dish and my god this beetroot relish was gold! The duck was amazing and the orange and pistachio salad complemented the dish with the sweetness its citric juices! OMG!

Desert

Lemon bread and butter pudding with maple infused cream
I love bread and butter pudding Soo much i pretty much polished this plate clean! The maple inflused cream was amazing! Love right hereeeee!

Sour cream cheese cake with coffee roasted apples
Its great sitting next to someone who is gluten free at times like this.. Big thanks to Ellie for giving me the base of her cheesecake (THE BEST PART IN MY BOOKS) Sampled her cheesecake and my goddddddd it was friggen delicious!!!!!!!!!!!

  5. LOL…I’m still trying to finish off all the meat from the goodies bag! I’ve made 10 pizzas since and still going.

    confit of duck looks too good. Wish we had that at the Melbourne event! :P
