Etch – Time Out Readers Event

Time Out Sydney Magazine held an Etch special which was too good for me to say no to. It was perfect timing as it was Nadine’s p-o.com administrator’s birthday and as always, to celebrate this occasion over food is always a good idea.

As soon as we got there we viewed the set menu and instantly knew what we wanted. My photos didn’t turn out well which sucked but I knew it was going to fail because my hands kept shaking from 3/4 coffees I had during meetings that day. I didn’t want to flash it especially since it was fairly dim and empty plus I didn’t want to ruin other peoples experience. =|

Spiced kingfish with Bangkok flavours
I’ve had a billion king fish dishes and this one tasted very similar to Shangri-La. This dish had more of a asian feel to it especially with the bean sprouts, and light chilli taste

Roast rump of pork with crackling
Thoroughly enjoyed and plate spotless! How could you say no to pork crackle by Justin North?

Cauliflower, cepe and macaroni cheese
I thought i’d be brave and try the other alternative which was this dish. I figured its been 15 years since I last had macaroni and cheese. The top had a crispy crumble texture which worked wonders.

Desert

Rhubarb, vanilla and gin trifle
The best trifle I have ever tasted! I’ve never been a fan of home made trifle growing up.. I think its because of the jelly, sponge and fruit mush that always made me cringe. This one however was pure bliss! definitely a dessert must have.

Caramel date tart with burnt butter ice cream and Earl Grey tea syrup
Another dessert must have!

Baked chocolate delice with mandarin
If your feeling naughty this dish isn’t the chocolate fix you are after. It’s a very light dessert (flourless chocolate cake)  which leaves you feeling not guilty. Great dessert as mandarins are in season!
