For those who have never heard of Michael Moore. He is the owner and chef of Summit on top of Australia Square. I’ve been there three times in my life and its always been a winner. Michael’s recent project is opening Eat deli kitchen which specialises in delicious meat!
Idiot me forgot to take a photo of Michael Moore as I was deep into concentration mode while listening to him talk about his cooking techniques which sold me on his Reuben sandwich that i’ve been dying to try. Any New Yorker would know how popular this sandwich is and we must praise Michael for bringing it to Sydney’s shores. With its huge success, one customer said it was better than New York! Big accomplishment!

If your wondering how popular this sandwich is… Michael has sold about 100kilos of beef a day. He explains how he is also a big fan of sustainability when it comes down to wastage which is think is great if you could leverage and make multiple things like stock and find other ways to use pieces of a beef to make various dishes.

Unfortunately he ran out of rye bread which meant he couldn’t make us the full works. Having said this he gave us lean slices of slated wagyu beef, sauerkraut, pickles and mustard (SOOOOO GOOOD) I’ve been thinking about it non-stop and counting down the days till Friday where I can enjoy a relaxing lunch with my bomb corned beef sanga!
