Its been a while since I last baked and about time (so the boy says)!!
B: Mmmmm these are goooooooooddd
Me: give me a bite
B: noooo haha its about time you made me something
Me: better enjoy it cos its gonna be a long time till I make you something again *evil laugh*
Its a rare occasion that im in the mood for baking. So I figured i’d bake something since i’m for once in the mood LOL!!!!! I always wanted to be good at icing cupcakes because when I buy them I just think ‘god your so beautiful!’ Quite frankly I learn’t that i’m pretty bad and icing them haha oh well they taste blardy good and it all comes down to the quality of the cocoa!

With the left over batter, I found mini cupcake cups in the pantry. Always wanted to make mini ones for the sake of them looking uber cute! Turns out they look like mini poo cakes hahah! I should have filled them up to the top but then I didnt have enough filling :(

The cake turned out fantastic! My parents aren’t cake eaters and my dad aint a fan of chocolate. Just to see them hoeing into this and asking for more meant I got approval and the compliment I was after! All up the boy and I ate about 3 cupcakes (shiet im a pig) and I ate a couple mini ones during the photoshoot process HAHAHA..

The Recipe
3 eggs
3/4 cup of milk
2/3 cup caster sugar
125g of butter
1/3 good quality cocoa
1 cup self raising flour
1/2 teaspoon bicarbonate of soda
Method
1. mix softened butter for 3 minutes on high
2. add eggs, milk and slowly pour in the flour and cocoa mixture mix until smooth
3. scoop into muffin trays
4. place in oven on 160º
Frosting
1. Add 125g of softened butter and tablespoon of milk to the mixer
2. add icing sugar and cocoa to the butter and milk and mix on medium for 3 minutes..
3. done!

Lol. You’re so funny! You’re right – mini ones do not count. Hehe. They all look so cute and I love the pink hearts on top! I could so go for a chocolate cupcake right now!

I think the cupcakes look very pretty. I am pretty crap at icing cupcakes. I think its a patience thing. Sometimes I just dont have any ehehehe. I cant wait to see more baking goodies..

Ooh, so pretty! Especially the heart sprinkles in the first pic!
I was wondering though, I see you have used 2 layers of cupcake papers for the mini-ones… did you bake them with two on, or you added it after?
Cos recently I baked cupcakes with decorated papers and the oil from the butter totally muted the design. I wasn’t sure if I was supposed to bake them with the papers double layered or put them in fresh papers after they’re baked.

Good question. I made about 5 mini cupcakes with 1 layer at first but then my instincts kicked in thinking they’d stuff up or not hold its shape as the paper is thinner than normal cupcake shells.
From then onwards I baked them all using 2 in fear they would loose shape. The 5 that I did with 1 layer turned out fine in the end.
I guess if you layer it with 2 or 3 is safe option ^_^

Thanks! I’m making normal sized cupcakes with cute Wilton duckie papers for my nephew’s birthday. I did a trial run the other night and when I baked them in one paper, the butter from the cupcake made the design on the wrappers hardly visible! The ones you made still look like they do before baking, so I just wanted to know whether you added it after or before. I will have to test out using double layer and see whether the butter soaks through 2 papers!

Ooohh are those wilton cupcake paper cases??? And it’s always good when you get the approval of the parentals AND the boy…. always a good sign!

why must you always make me wanna lick the screen! I just came back from a pretty bad Japanese dining experience, so my tummy still yearns for redemption.
I reckon your icing skills are pretty up there. Good job. I have a hand of an an elderly man, so all I care about is how they taste. I ain’t selling em anyways!!

Small size equals one bite!….then you eat more! I have the exact same cupcake papers, I havent used them yet, but yours look so pretty.
Baking is so fickle. I’m the same, I need to be in the MOOOOOD!…..sometimes I just have a headache or I need to get up early in the morning.
