100th Post – Melting Moments

This is officially my 100th post and 1st entry for 2010! Yea yea I know some of you are thinking “ABOUT BLARDY TIME” as its taken me 10 months to get this far (snail i am) LOL!!! Since its a tiny milestone, I thought i’d bake something simple for this occasion.

Its the most simple recipe ever that even the dopiest person could make it. I ended up making 4 batches over christmas with one batch screwing up. For some reason I couldn’t bring myself to eat more than one because when I bake, I loose my appetite as the smells make me feel like i’ve eaten a whole batch. Does anyone feel the same??

If your after complements i guarantee you the family and friends will love them. Cousin’s gf loved them soo much she asked if she could take some home as she said she pays for these at a cafe for around $3 – $5^_^.


Big Phat Boo Boo

House was running like a zoo, the constant visitors, door bell ringing,  I did something stupid in one of the batches I made.. I accidentally put 1½ cup of icing sugar instead of ½ a cup. When I placed them in the oven I instantly knew I made diabetic cookies LOL!!!

For the record, these weren’t the ninja disc cookies I was telling a few of us about.. I’ll post it up later when I make a better, non-burnt, rock hard black batch LOL!!!

Recipe

Preparation Time: 20 minutes
Cooking Time: 12 minutes
Makes: 25

Biscuits

1 cup plain flour
¼ cup self raising flour
½ cup custard powder
175g unsalted butter, softened to room temperature
1 tsp vanilla extract
½ cup icing sugar

1. Preheat oven to 180°C fan forced
2. Mix butter, vanilla extract and icing sugar and beat for 3 mins until very light and fluffy
3. Add the sifted flours and custard powder and mix until well combined.
4. Roll dough into ball using a teaspoon and place on baking trays pressing lightly with a fork
5. Bake for 12 minutes

Cream Filling

1½ cups of icing sugar
40g softened butter
2 tsp vanilla extract
½ tsp lemon juice

1. Beat icing sugar, butter for 3 minutes
2. Add vanilla extract and lemon juice  and beat until light and fluffy
3. When biscuits are cool, spread vanilla icing :)

  10. Congrats on your 100th post! And Melting Moments are always a favourite of mine! What did you end up doing with the dud batch? Still edible? lol . Otherwise I imagine they’d be good with strawberries and cream… :)

    I don’t find I lose my appetite over baking. Quite the opposite actually. Though, I don’t often bake, so that may be some constributing factor to it.

    These look great, though I’m not the least bit surprised, all things considered :)
